UF/IFAS Offers Distance Education Human Nutrition Course

GAINESVILLE – “Fundamentals of Human Nutrition” will be offered this spring through the University of Florida’s Institute of Food and Agricultural Sciences distance education program.

The three-credit course will examine the following basic principles of human nutrition: functions and food sources of nutrients; metabolism of energy sources; role of diet in health and disease; consequences of too much or too little of a substance in the diet; and the influence of life cycle stage on nutrient requirements. GAINESVILLE—In a state where citrus reigns supreme, most residents view bananas as just something to slice up and toss on top of their Cheerios.

But worldwide, bananas outrank citrus as a fruit crop, and scientists at the University of Florida are assisting in global research efforts to manage important banana diseases and make the fruit tastier. (more …)

Otwell Receives Vice President’s Hammer Award For Excellence

GATLINBURG, TN — Steve Otwell, professor of seafood technology with the University of Florida’s Institute of Food and Agricultural Sciences, received Vice President Al Gore’s National Performance Review Hammer Award for leadership of a new nationwide seafood safety training program. The award was presented during ceremonies in Gatlinburg, TN on September 22.

Otwell, who serves as seafood technology specialist for the Florida Sea Grant program, is national coordinator of the Hazard Analysis Critical Control Point (HACCP, pronounced HASS-ip) training program to help seafood processors and inspectors comply with new federal food safety regulations. GAINESVILLE—James M. Davidson, University of Florida vice president for agriculture and natural resources, has announced plans to retire on Jan. 31.

Davidson is the administrative head of UF’s Institute of Food and Agricultural Sciences (IFAS).

In a Sept. 22 letter to UF President John Lombardi, Davidson indicated that a new UF/IFAS long-range planning effort and the kickoff of the UF Capital Campaign were major activities that would continue beyond the spring of 1999, when he originally had planned to retire. (more …)

LIVE OAK—At 14, Kelli Neal might seem young for a chicken farmer.

But in her community, she’s an old pro. With almost a year of experience behind her, she shows other friends ages 7 to 14, how to pull henhouse duty.

She was quick to learn lesson No. 1 about farming: It’s a daily responsibility. So day in, day out, she collects the bounty of 50 Leghorn laying hens. She knows what to look for in inspecting eggs as she cleans them and packages them for sale at the local farmers’ market. (more …)

GAINESVILLE – A new University of Florida continuing education course for real estate agents debuts in Florida in October. Called “Sell Green & Profit,” the 11-credit UF Institute of Food and Agricultural Sciences course trains real estate agents to spot passive design features in a home that reduce heating and cooling bills; landscaping that reduces water, energy and chemical use; and features that contribute to healthy indoor air. GAINESVILLE – Home builders and real estate agents in rapidly growing Florida are learning that being green-minded can put more green in the bottom line under a new program developed at the University of Florida.

Build Green & Profit, aimed at encouraging energy-saving and environmentally efficient practices in the building industry, debuted last year. Co-sponsored by The Home Depot, it encourages builders to incorporate “green” practices into their designs, reducing the demands for energy and water. Nearly 250 Florida builders have taken the course since February. (more …)
