BUT UNIVERSITY OF FLORIDA NUTRITIONISTS SAY YOU CAN TRIM THE FAT ANYTIME TO HELP AVOID THIS ANNUAL WEIGHT GAIN. UF NUTRITIONIST, DR. LINDA BOBROFF SAYS YOU CAN START BY SUBSTITUTING LOW OR NONFAT ALTERNATIVES IN DESSERT RECIPES FOR HIGHER FAT INGREDIENTS. SHE CALLS THE PROCESS...RECIPE REFORM. FOR EXAMPLE, IF YOU'RE BAKING PUMPKIN PIE...TRY USING LOW FAT OR EVAPORATED SKIM MILK IN THE PIE RECIPE INSTEAD OF HALF AND HALF WHICH HAS A MUCH RICHER TASTE AND ALL THE CALORIES TO GO WITH IT. SHE ALSO SUGGESTS IF YOU EAT MEAT DURING YOUR MEALS, USE TURKEY AS THE ENTREE AND KEEP IT LOW IN FAT BY REMOVING THE SKIN BEFORE EATING IT.

Dr. Linda Bobroff-UF Nutritionist: "Certainly if you take the skin off before you eat it, turkey can be a very good choice. The white meat tends be a little bit lower in fat and calories than the dark meat. But not a substantial difference so if you prefer the dark meat, thatŐs fine too. But it is certainly lower in fat than say a highly marbled roast beef or something like that." (:19)
